Skinny Noodles Recipe: Healthy Shiitake Stir-Fry
Here’s a savory, healthy stir-fry recipe that you’d normally serve over rice or starchy noodles. By using Skinny Noodles, you cut the carbs in this gluten-free stir fry dish down to less than 10 grams and the calories to 270 per serving! Ingredients:
2 Tbsp canola oil
1 8 oz chicken breast (cut into 3/4 inch cubes)
2 scallions julienned
1 carrot, shredded
1/4 cup fresh shitake mushrooms (or rehydrated and rinsed, if dried)
1 8 oz package Skinny Noodles (rinsed and drained)
1/4 cup water
Sauce:
1/3 cup ready-to-use bottled teriyaki sauce
1. Heat oil on high heat
2. Add chicken and cook until lightly browned
3. Add scallions, carrots and shitake mushrooms, cook for 3 minutes
4. Add sauce to stir-fry
5. Add noodles and water, stir-fry for 3-4 minutes or until sauce thickens
6. Plate and garnish with sesame seeds
Makes 4 servings
Per Serving; 272 Calories, 15g protein, 10g carbohydrates, 17g fat
