2 WEEK GROCERY HAUL & (MOSTLY HEALTHY) MEAL PLAN FOR FAMILY OF 5
Today’s video is another Walmart & Costco grocery haul along with some of the meals we plan on making over the next two weeks.
As I mentioned in the video, we did already have some meat and fruit in the freezer and some pantry items (pasta, rice, oatmeal, chia seeds, tuna) so we are using some of what we have in addition to what we just got.
I forgot to mention in the video that we spent $403 at Costco and that includes a bag of dog food that went straight to our outside kitchen.
Here are the meal options I have written down for the next two weeks (I will link recipes I have but if there is no recipe it’s in my head). I have written them in order of most perishable ingredients being used first before they go bad and longer-lasting items after (use up the bagged salads asap! They don’t last nearly as long as the fresh produce, even when the date is good).
Breakfasts:
• Half of a Dave’s bagel with cream cheese strawberried, and a hard-boiled egg
• Fruit and yogurt parfaits with nuts, chia seeds, and a little honey
• Steel cut oats in the Instant Pot (2 cups oats, 3 cups liquid, high pressure 3 minutes, natural release)
• Blueberry Oatmeal Bake
• Chunky Monkey Smoothie & hard boiled egg
• Chia Seed pudding with almond milk, almond butter, and blueberries
Lunches:
• Charceuterie trays with fruit, veggies, cheese, nuts, etc.
• Tuna melts – mix tuna and mayo, season with salt and pepper, spread on a slide of bread and top with cheese. Broil on a cookie sheet open-faced until cheese melts
• Leftovers from dinner
• PB&J, veggie, chips
• Annie’s mac & cheese and salad
• Frozen Turkey burgers (cooked), with greens and chipotle mayo (chipotle chili powder mixed with healthy mayo) or in a chopped salad with hard-boiled eggs, veggies, cheese, etc.
Dinners:
• Chicken Caesar pasta salad with pasta, leftover rotisserie chicken, torn up romaine, grated Parmesan, and this dressing
• Shredded chicken thighs in BBQ sauce, Cole slaw, fried potatoes
• Carne asada with rice, pico, guacamole (I separated the beef and froze it right away to buy more time before making it)
• Pot pies on kids night
• Turkey meatloaf, roasted frozen veggie fries, spinach salad with avacado and Costco salad topper
• Garlic Mushroom Quinoa (I’m using regular Walmart mushrooms)
• Grilled cheese and tomato soup (I use this recipe but use honey instead of the sugar, add a TBS or two of balsamic vinegar and honey, and blend it right in the pot with an immersion blender)
• Kodiak pancakes with PB and fruit or eggs
• Breakfast bake with sausage from freezer, eggs, grated cheese, spinach
• Costco brisket either in taco bowls or over potatoes with a green side
