I made this recipe. I was surprised for the use of vinegar. I have to say, it tastes great. I used more mint than this recipe asked for. However, the end result, although very good, did not taste like mint jelly to me. It tastes more like a tangy apple. I used this recipe only because I could not find pectin in time for my fresh mint. I will find another recipe for mint jelly , but I'll buy pectin next time I stead of using apples. It is a easy recipe and worth making.
What do you think of substituting maple syrup for the sugar?
I had a lovely lemon balm mint plant growing crazy big and wanted to find a way to preserve its sweet fragrant goodness. I found your video which inspired my lemon balm jelly. I didn't have any apples, so ended up substituting pectin to help it set. My husband said it tastes like honey, but much better. I did not add vinegar nor food coloring and added a pat of butter which help eliminate the foam. Hope that doesn't create a problem later. I want to try yours when I have all your ingredients on hand. Thank you so much for sharing.

As much as I loved my grandmother, for some reason the time she made mint jelly some 30+ years ago is the one thing that always stands out in my brain. Never tasted it, no idea how it was…I just remember my mother and aunts not wanting it as she didn't strain it and left all of the stems and leaves in the jelly. This was one of the few times I remember her getting angry and no one wanted it and she was sitting alone at the table with me and a spoon in my Aunt's kitchen eating jelly out of the jar while grumbling that she didn't see anything wrong with it. I guess I should have tried some to make her feel better, but at 6 years old the concept of anything other than grape jelly at that point of my life was unacceptable.
Anyways, about to get a garden started, and was planning on planning some herbs. May need to give this one a whirl…and remember to strain it 🙂
