Pasta with Pesto Cream Sauce – Pioneer Woman Recipe!
Pasta with Pesto Cream Sauce
This recipe comes from the Pioneer Woman Cookbook:
Ingredients:
¾ cup basil leaves
¾ cup grated Parmesan cheese
3 tablespoons pine nuts
2 garlic cloves, peeled
Salt and pepper to taste
1/3 cup olive oil, a little more if needed
½ cup of heavy cream
2 tablespoons of butter
12 oz of pasta, cooked to al dente
4 roma tomatoes diced
Directions:
First, make the pesto. Add the basil, ½ cup parmesan cheese, pine nuts, peeled garlic, salt and pepper, and olive oil. Continue to mix until everything is nicely mixed together.
Heat the cream in a saucepan and drop in the tablespoons of butter. Add the pesto. Stir this together and let it simmer a few minutes. Add in the remaining Parmesan cheese and stir it together. Add the drained pasta to a serving bowl and pour the pesto cream in. Add in the diced tomatoes and toss it all together. Serve right away.
