The stalk is the most sharp, flavorful part. When I was a kid I would usually be given it peeled after the leaves were used in cooking. The outer part where leaves touch it is hard. But probably not so with a small young cabbage like this. Now, I slice a cabbage vertically a few times and put it in an electric grinder, and don't notice any hard bits in the mix. Very juicy and easy to eat result. Low waste and quick. When sour c. is made commercially, they probably use it all.
