¼ cup olive oil
1 chipotle chile in adobo sauce
1 large onion, finely diced
2 large carrots, finely diced
1 large celery rib, finely diced
1 tablespoon ground cumin
1/2 teaspoon dried oregano
1 teaspoon dried thyme
8 garlic cloves, minced
1 teaspoon salt
1/4 teaspoon black pepper
6 cups chicken broth
2 boneless, skinless chicken breast seasoned with Adobo Goya
2 medium potatoes
1/4 cup half and half
1 teaspoon adobo sauce
2 plum tomatoes, seeded and chopped
1/4 cup chopped fresh cilantro
lime wedges, for serving

I see you added the sofrito with the veggies, but you didn't say how much, and it is not included in the ingredients list. How much sofrito?

I'm planning on making this for Sunday supper tomorrow and can't wait! Is this very spicy? my husband loves chipotles but I find them to have a lot of heat (I'm a spicy food wimp lol)

Great video. I think you do a great job of explaining what you're doing throughout the cooking process. The only thing I would consider doing to improve your videos is to measure your stove dials with a thermometer so you can give people a more accurate temperature that you personally are cooking with. I'm sure you know exactly how hot those 1-10 numbers are, but the viewers might be a little unclear. Again, awesome video. I'm going to have to make this soon
