Hey everyone! Sorry for not posting a video last week. Life has been a little bit hectic, but here is a random video of a sandwich I made last week, our day on Sunday (just bits and parts of it) and a really yummy split pea soup that my mom and I made for dinner Sunday night! The soup is super simple and oh so yum!
~Split Pea Soup~
Ingredients:
•1 yellow onion, diced
•2 cloves garlic (large), minced
•2 TBSP olive oil
•1 tsp sea salt
•1 tsp pepper
•1 bay leaf
•1/2 tsp oregano
•2 cups carrots, chopped
•2 cups russet (or red) potatoes, chopped and unpeeled
•2 cups dried split green peas, rinsed
•8 cups vegetable broth
Cooking Instructions:
1.) Add oil, onions, garlic, salt, pepper, and oregano to a large pot over medium heat. Cook till onions are translucent and soft and garlic is fragrant (12-15 mins).
2.) Add remainder of ingredients to the pot and stir till well combined. Bring to a boil then reduce heat to a simmer and cook uncovered for about 45-55 mins till peas are soft.
3.) Remove bay leaf and take out 2 cups of soup and blend in a blender till smooth then return to pot (I know this step sounds silly, but I swear it’s needed and makes the consistency so much better).
4.) Serve it up with some crusty bread, croutons, or just by itself and add additional salt & pepper to taste if desired!😋
