I just made this recipe for tea and even my fussy teen loved it.

I was totally with u until the words "a very light cheesing". I usually use enough cheese to make sure u won't be "regular" for a week so a light cheesing just isn't for me lol then again I'm a cheese-aholic so maybe I'm abnormal. That dough looks awesome though. I've prob watched 10 videos trying to decide which dough to make for my spinach pies and this is the one I'll be using so thank for that Chef John u kick ass!

But there's a bit of information missing for people who use instant instead of active, since instant is much more likely to be alive than active you need to use less. Like 15% less of what the recipe says. So maybe use 1.75 teaspoons instead of 2.15.
This dough came out a bit too yeasty for me the many times I've made it, so this is a recent change I'll be trying now to get it hopefully less yeasty.
