Eric's Eastern Shore Crab Cakes
This simple and delicious Crab Cake recipe will impress your friends and family.
Recipe:
Eric’s Eastern Shore Crab Cakes
1 lb lump crab meat
1/2 cup fresh bread crumbs (white bread in a food processor) or 1/4 cup crushed saltines or dried bread crumbs.
1 tbsp Dijon mustard
2-4 garlic cloves smashed and minced
1/4 cup real mayo
1 tsp old bay seasoning
1/2 tsp onion powder
Juice of 1/2 of one lemon
1 tsp hot pepper sauce (like Tabasco)
2 egg whites beaten to stiff peaks
Salt and pepper to taste
Additionally:
1/2 cup mayo for brushing on the crab cakes prior to air frying them.
In a mixing bowl, place all of the ingredients except the stiff egg whites. Fold ingredients until they are well combined, but gently. Add the stiff egg whites and fold in gently to combine.
Make crab cakes into 4 (3 oz) cakes, flat on the bottom. Cover with plastic wrap and refrigerate for at least an hour. Brush with the remaining mayo and air fry in your PowerXL Air Fryer for 8 minutes at 400ºF.

Ingredients
1/2 cup butter, melted
4 tbsp mayonnaise
1 tsp tomato paste
1 tbsp horseradish
1 tbsp sour cream
2 tbsp hot pepper sauce
1 tbsp honey
1/2 tsp smoked paprika
2 garlic cloves, minced
Juice of 1 lemon
Salt and pepper to taste
Whisk all ingredients together in a medium bowl and enjoy!
