HEALTHY PERSIAN SALAD FOR BREAKFAST
INGREDIENTS:
Cucumber
Tomatoes
Pink onion
Parsley
Olive oil
Lemon
Mix of dry vegetables
Paprika powder
Garlic powder
Baguette
1 Avocado
1 Spring onion
1 oz (30 grams) Sour cream
1 Lime
Olives
First, cut the cucumber, tomato and the pink onion into small pieces and put them together in a bowl. Second, cut some parsley into small pieces and add it to the bowl.
Season everything with salt, add some olive oil and lemon and mix all together.
In a plate add the spices (mix of dry vegetables, paprika powder, and garlic powder), add around 2 tbsp (30 ml) olive oil and mix them.
Cut the baguette into pieces and soak them in the mixture of spices. Roast them in a grill pan, until they are crispy.
We’re gonna make avocado paste for the baguette. You can use Mortar & Pestles or just use a fork.
We are gonna use 1 avocado, 1 spring onion and 1 oz (30 grams) sour cream for the dip.
Optionally you can grate some lime into a dip.
Spread the dip onto the grilled bread. Garnish with some olive oil and enjoy this healthy persian salad for breakfast.
