Greetings to Anaardana followers. Today’s special is the famous Maharashtrian tea time snack; ALOO BONDA or BATATA VADA. This is a fried snack which has a filling of sautéed mashed Potatoes coated with a thick covering of Besan ( Gram flour). The filling can be sautéed in any method, however, I am sharing the authentic Batata Vada recipe. Hope you will like it.
Here are the Instructions. ..
INGREDIENTS for about 8 to 10 Aloo Bondas
1 Cup Besan
1/2 cup water ( add slowly, avoiding the lumps and maintaining the thick consistency required to make Bondas)
1Tb Sp Oil
1/2 T Sp Turmeric
1/2 T Sp Red chilly powder
1/2 T Sp coriander powder
1/2 T Sp Salt
Pinch of Garam masala
Pinch of Baking Powder
For the Filling
3 to 4 boiled medium sized Potatoes
Few Curry leaves
2 Tb Sp chopped Onions
1/2 T Sp chopped garlic (optional )
1 T Sp Mustard seeds
1/2 T Sp Turmeric
Salt to taste
2 Tb Sp Oil
Few chopped green chillies, green coriander leaves
DIRECTIONS
1. Prepare the Besan batter by mixing all the Ingredients and keep it aside.
2. Prepare the boiled Potato filling and allow it to cool. Then make balls of the filling as per the desired size. Bondas are generally make round in shape.
3. Heat oil, and Roll each ball generously over the filling. The filling should be thick enough so that it does not drip around in the hot oil.
4. Fry all the Bondas in the same way.
5. Prepare coriander chutney
Serve hot Boondas along with hot Tea or Coffee.
YOU MAY FRY WHOLE GREEN CHILLIES IN THE SAME BATTER AND ENJOY THE SPICY CHILLIES ALONG WITH THE BATATA VADA. ..
