One of my family’s favorite cookies to make at Christmas time. These are extremely flavorful, and can have a very yummy texture. Your family will never have to know it’s totally Gluten Free, Dairy Free, tropical oil free (coconut and palm oil), and corn free (always check to make sure the mix has not added any surprise ingredients, but as of the time of posting, the mix is free of these top 4 allergens)
For this recipe you will need:
2 Eggs
1 tsp Vanilla
1/3 Cup Vegetable (or Canola) oil
1/4 Cup Sugar
1 bag Betty Crocker Gluten free Devil’s Food Cake mix
Approx. 1 Cup corn-free Powdered Sugar for rolling cookies
Preheat oven to 350 (or 360, depending on oven). Mix wet ingredients together, then pour remaining ingredients (except for the Powdered Sugar) into a large mixing bowl and mix well.
Shape small balls and roll in powdered sugar. Place on cookie sheets with enough space for your cookies to settle and spread a bit.
Bake for 7-12 min. Less baking leads to a gooey cookie, but you don’t want to under bake too much due to eggs in the cookie. Longer baking leads to a more crunchy texture. I recommend starting at about 9 min for your first batch and seeing how they turn out, and tweaking the times to suit your taste.
