I'll do it with smoked Schweinehoxen.
I fermented a nice big sized whole head with 2 or 3 leaves removed August 2020 and its been on the counter this entire time. Its still very crunchy and not turned clear, some parts are still white, green and some have gone clear. It smelled like vinegar and it tasted awesome, and it essentially was cleaning my teeth much like vinegar does. How is it still white and green after 6 months ?
It should say cooking with sourkraut . Not a sourkraut recipe.

Reminds me of my younger days attending the Sauerkraut Festival. They had ever type of recipes starting with salads and yes believe it or not desserts. All good can't wait for a family gathering to try this recipe.

Sauerkraut is FERMENTED Cabbage..this is just Cabbage and other ingredients.

I don’t care how many awards you have one with your wonderful recipe I am sure that it taste spectacular however when I eat sauerkraut I am expecting the probiotic advantages and all the vitamins and nutrients and minerals that come with it once you cook it you have destroyed the majority of its health benefits. But let me reenter rate your recipe is spectacular and as the food I am quite certain that is it it is exquisite in taste and texture congratulations it wonderful preparation for the taste buds
