McDougall Oil Free Mayo! Finally! This recipe is from the Starch Solution book by Dr. John McDougall. This Oil Free Mayo is so quick and easy. Takes about 2 minutes to make. Most store bought vegan mayo is full of oil and other not so great ingredients. This recipe has whole food plant based ingredients. Perfect if you are following the Starch Solution diet. This Oil Free mayo is creamy and so delicious. I hope you try Mcdougall’s oil free mayo. Here is what you will need to make this oil free whole food plant based mayo:
*Ingredients*
**one 12 ounce box of Mori Nu silken tofu drained
1 1/2 T lemon juice
1 tsp granulated sugar
1/2 tsp salt
1/8 tsp white pepper
1/4 tsp dry mustard ( I used 1 tsp Dijon mustard)
*Instructions*
place all ingredients into a food processor and blend till smooth.
Store in a glass jar in the fridge.
That is it simple and so yummy!

I would add some kala namak. Be sure you're using organic sugar or it may not be vegan; sugar is frequently processed using animal bone char. Can't wait to try this!
Well, I'm kind of a mayonnaise snob, and I thought it was pretty good. I added some apple cider vinegar, and some red pepper flakes. Needs some oooph. I used the organic one. I might try the firm next time, but prefer organic, so might dry it out a bit if I try using again.
Are you using silkenextra firm tofu?
Have you ever tried substituting anything for the sugar? Like dates? Just curious if it would ruin it like not having exactly 12 oz of that tofu does.
How long it stay good in the fridge, a week?
omg! this is amazing! i tried this with refrigerated (fresh?) silken tofu once and it was SO bad so i was very hesitant about this. i had to drive for a while to find the mori-nu brand, got my hands on the firm one and immediately made this when i got home. the texture is sooo rich! i added some black salt as well for the eggy flavour (you hate it or you love it). can't wait to make chickpea salad and potato salad 🙂 thank you!!!!
