Ingredients:
1 cup boiled/cooked cassava (after blended)
1/2 cup cream from coconut milk + 2 tbs coconut oil or beef tallow
1.5 tsps Himalayan or sea salt
1.5 tsps apple cider vinegar or lemon juice
1 tb grassfed gelatin
Instructions:
1. Blend cooked cassava with a blender or food processor until smooth (will be quite sticky).
2. Add coconut cream, sea salt, and Lemon and blend well.
3. Add gelatin and blend until smooth.
4. Pour into a bowl and refrigerate for at least 3-4 hours, or until hardened. **note: The harder the cheese, the easier it will be to grate.
