I live on the west coast, but have family in Syracuse. Salt potatoes, especially bags of Hinerwadels salt potatoes, were always part of our summer picnics and clam bakes. I miss them terribly. But, I can make a pretty reasonable version with small white potatoes I get from a local grower.

What the? Why are you posting a Chef John video, from food wishes?
…The History Guy just posted a presentation on Syracuse Salt Potatoes…
Replaying an actual content creator's video is…lame.
Did you receive permission from Chef John to use his content? If not; take it down and do your own.

I'm from Syracuse.. you have done well, my young paduwan. 🙂
In the 19th Century, there were bars in Syracuse NY, that served only beer and salt potatoes!
Looked it up–a saturated brine solution boils at 109 C, which compares to 100 for pure water. the potatoes woul cook quicker.
I love all recipes! Especially this guy!
A true delicacy when served with BBQ chicken.
