Mock Chocolate Ice cream
Ingredients: serving 2
• 2 scoop chocolate plant based chocolate protein powder
• 2 tbsp. raw cacao powder
• 4 tbsp. heavy prepared whipping cream (optional)
• ½- ¾ cup cups coconut milk
• 3 tbsp. cacao nibs (Terrasoul superfoods)
• Sprinkle of toasted coconut flakes
• Pinch of swerve or 2-3 drops of stevia (optional)
• 4 tbsp. chopped walnuts
• 10 ice cubes approximately 1 cup
Directions:
Place ice cubes in blender with ½ cup coconut milk then blend to crush ice, add 2 tbsp. walnuts, 2 tbsp. cacao, protein powder a bit more milk and blend on high speed scraping down sides as needed. Add more coconut milk to blend if necessary, (careful not to add to much milk or it will turn into a thick smoothie, Place ice-cream into a decorative cup and put in freezer for 5-10 minutes no longer you do not want it to freeze. Top with walnuts toasted coconut, a sprinkle of cacao nibs and a dollop of homemade whipping cream and enjoy!!

Ingredients: serving 4
• 16 ounces organic strawberries (3 cups)
• ¾ cup coconut cream (Trader Joes)
• 2 cup heavy organic prepared whipping cream
• 1 tsp. swerve or 2-3 drops of stevia to taste
Directions:
Rinse and dry off strawberries cut stem and slice. Place strawberries and 1 tsp. of swerve or stevia into cuisinart or Vitamix blend until creamy. Add coconut cream blend until smooth, transfer to bowl and fold in 1 ½ cup of whipping cream (reserve a bit of cream for topping. Fold strawberry mixture into a decorative glass. I like to use a martini glass top with whip cream and toasted coconut flakes and enjoy!!
Toasted Coconut Flakes
Ingredients:
1 cup of unsweetened organic coconut flakes (Trader Joes)
Directions:
Place coconut onto a cookie sheet make sure to spread it out. Turn oven on broil place coconut about 8-10 inches just underneath broiler for up to, no more than one minute. Check at 40 seconds to make sure it does not get to brown. You want a slight crisp to bring out the sweet and crunch of the coconut. Let cool, will keep in a glass jar for up to 1 week or longer. No need to refrigerate.
