Omg.. this looks like the way that my ex's grandmother use to use. It looks amazing. My ex was P.R. and I used to look forward to the days that his family would invite me over for dinner. This dish was by far one of my favorites (among many), especially when eaten with chuletas….so good. Thanks for posting. I will attempt to recreate your masterpiece! I see that u didn't rinse the pigeon peas out u use the same liquid,and as for the rice u didn't rise it ,old school says to rinse starch and foreign matter,O how long did u cook the liquid before adding the rice,I am going to try it looks sooooooooo goooooooooooood.
hi i have not been able to upload it yet but its very simple, you buy annatto seeds and use oil. in a pan heat your oil and seeds at same time, try to never burn them or let them turn brown. should take 5-10 min the oil should start turning a orange reddish color. drain it and store it, i use my within 2 weeks .if it burns discard it, when the oil burns it becomes bitter and is useless

that is achiote oil that i made with annatto seeds.. you can always use store bought achiote or bijol food coloring..
i usually use uncle ben's or goya canilla long grain rice but you can also use parboile,jasmine or brown rice.
