Aquafaba Chocolate Mousse
Aquafaba is the thick liquid that is left after chickpeas have been cooked. It is used in baking to replace egg whites.
I always use sprouted chickpeas, so the aquafaba I get is pretty healthy.
I never use canned food. I make everything from scratch.
Ingredients:
125 ml Aquafaba about 1 small glass
100 grams dark chocolate (I used 85% but not sugar-free)
1 tbsp of agave ( you can substitute with any other sweetener of your choice. I did not add any this time cos the chocolate already has sugar.)
½ tsp vanilla sugar powder
½ tsp salt
How to:
1- Melt the chocolate over a bain-marie – also known as a double boiler
2- When the water starts boiling, move to low temperature and keep it going until the chocolate has completely melted
3- Put the stove heat off – Remove the chocolate bowl and let it cool down
4- Start whisking the aquafaba until you see the white foam has formed. For best results use an electric whisk.
5- Add the Agave, salt, and vanilla and whisk a little more until it thickens.
6- With a spatula, add slowly the melted chocolate, don’t pour it all at once. Incorporate it slowly and stir until all the chocolate has been added.
7- Whisk again the whole mixture until it becomes thick texture.
I used a hand whisk but better to continue with the electric whisk.
8- Move the mousse into a bowl and leave in the fridge overnight.
You can also freeze it overnight. The next day, bring it out of the freezer and let it melt slightly before enjoying it. It is so yummy.
