I dehydrate the meat separately from the rest of the meal for better re-hydration. Check out that video here…
When I package the meal I weigh each portion and add spices and other ingredients before vacuum sealing.
I demonstrate with three meals how I follow this simple 5 step process…
1) Dehydrate the meat (160ยฐF)
2) Pre cook some ingredients
-starch (rice, pasta, potatoes)
-Vegetables that taste better after sautรฉ (onions and mushrooms)
3) Assemble the meal (without meat)
-Mix cooked and uncooked ingredients
4) Dehydrate the meal (135ยฐF)
5) Package the meal adding meat and extras
-Egg and dairy substitutes, spices

Here are the ingredients to my ‘Beef and Rice’ recipe…
1 cup brown rice
1 chopped onion
3 chopped cloves of garlic
1 Tbsp canola oil
1 pack of frozen spinach (thawed)
1 179 ml (28oz) can of chopped tomatoes
1 tsp salt
1 tsp pepper
This works with 1 lb of ground beef.
I didn’t write down my Tuna Caserole recipe. (sometimes I wing it!) I think it has…
1 chopped onion
1 pack of mushrooms chopped
1 can of cream of mushroom soup
1 cup of frozen peas
some cooked egg noodles
salt and pepper
It isn’t about the recipe but rather the technique. Cut out the fat and reduce the oils and follow the steps I show and almost any recipe can be converted for backcountry meals.

very good process. I never dehyed any of my food. but I am going to start . ! am 71 now I cannot put in long hours hunting for two bites I spend most of my time micro-mining. So dehydration concept is perfect thank you for sharing

i like this because you can adjust salt. I have no idea why companies put so much salt in their meals. I'm not trying to have a heart attack on the trail where help is hours away.
Thanks for the ideas. To up the game of these meals toast your spices and the grind the shit out of them in a mortar. Since the spices won't be cooking really this will help bring out the flavors in the final product.

Thank you for this wonderfully helpful video. Going on my first multi-day hike in a few months and have many food allergies so self-prep is a must. How long will the meals last dehydrated if not kept in the freezer? Also how long do they keep in a zip lock bag vs vacuum sealed? Thanks ๐
I wonder why my dehydrators take more like 24hrs guess I have to much humidity where I live but thanks for this vid, I am looking for meals I can dehydrate and vacuum seal in bags for those days I just donโt feel like cooking.
Older video I know, but I new to this and have seen it stated that you should put rice into the dehydrator while still hot. It looked like yours was cooked, but not hot. Any thoughts on that? Thanks

Thank you sir for the two recipes in the drop-down info menu. With regard to the tuna casserole recipe, does the recipe require one small can of tuna? It was the only ingredient that wasnโt spoken of in the recipe.
Donโt you worry about getting condensation in your freeze dried food, if you keep it in the freezer go once you take it out? After all, a person could be gone a week or two on a hike or even longer, and condensation in the food could really cause problems. Iโm not asking to be difficult, Iโm asking because Iโm dehydrating meals for hiking, and camping, and am genuinely interested for practical reasons.
That was extremely useful; I'm getting ready for a month-long car camping trip and trying dehydrating for the first time.
I was very impressed, but why do you freeze them? My whole idea of dehydration is so I don't have to use my freezer? I have only ever sun dried fruit and vegetables and stored them in sealed plastic bags or glass jars out of the fridge or freezer with no spoilage. I came across this great video, but freezing defeats my purpose unfortunately, is it necessary?๐๐

This was 5 years ago… I'm curious- has camping, prepping for camp inspired your Daughter or children to do the same? I have only seen this one video since I just got a dehydrator after being without for years, so you may still be making them and had updates. I think it was cool that you pulled her into the process! At that age the things Dads do with their kids can make a lifelong impact. Hope everything is well, thanks for taking the time to show us your approach to homemade "MRE's!"
Do you need to worry about food going bad when ingredients like coconut milk or creamy soup are added? I heard that if the meal is too fatty it goes rancid when dehydrated but after watching this video im wondering if its not as bad as I thought
