A Creamy Cauliflower Casserole-gluten free, whole food plant based, and 100% delicious! This Creamy Cauliflower Casserole recipe will soon become one of your favorites. I added a Yukon gold potato to take this to the next level.
Here is what you will need to make this Creamy Cauliflower Casserole:
one head of cabbage cut into chunks
one Yukon gold potato peeled and cut into chunks
3/4 cup cashew cream
1 tsp salt
1 T nutritional yeast
1 tsp onion powder
1 tsp garlic powder
1 tsp oregano
1/2 cup chopped red onion
1/2 cup chopped flat leaf parsley
1/2 to 3/4 cup plant based cheese
Instructions:
Add cauliflower and potato into a pot of water and boil until fork tender.
When fork tender drain and place the cauliflower and potato into a food processor and blend till smooth. Next add in spices and mix well, then add in onion and parsley and mix till everything is combined. Poor mixture into a casserole baking dish and dollop cheese sauce over the top and spread over the entire dish and bake in a preheated oven @ 375 degrees for 30 minutes then broil for a few minutes to brown up the top.
