LOVE LOVE LOVE my instant pot!>>>ur2.pl/1046 It is definitely not a necessity for everyone, but it has certainly made my life easier. I think the 8 quart version we got is maybe a little large for most people's needs, but I really appreciate the versatility of being able to put a larger quantity into the pot – it's made dishes like stir-fry and rice possible to cook at the same time. If you're on the fence about what size to get, or if you should get one at all, I would say go for it!

It's funny because my risotto always turns out just fine, maybe I like mine a little more al'dente than most. Thanks for the input.
@Turbolad995 Thank you so much for your comments…I do say that you need to follow your manufacturers instructions and I find that my Fagor does not steam until the pressure valve is engaged (unless of course, I don't have the lid on correctly but then it doesn't come out of the pressure release, but outside of the lid itself 🙂 ) and if I time from the time that the valve engages, I'm pretty good for the recipes I make. You cooker might work differently… Cheers ~ LindySez

You should start timing when the steam is being released – because that shows the pressure cooker is up to pressure, not above pressure (the safety devices activate if it goes above working pressure). The yellow pop-up only shows there's a slight increase in pressure – it does NOT show that it's up to the selected pressure level e.g. 15psi.
Try timing recipes when the steam is being released, then lower the heat and you will see how fast a pressure cooker really is! 🙂
