You will fall in love with these meatballs. They are so easy to whip up and extra tasty. Fully plant based and delicious, nut free, gluten free and oil free whew, can you believe it, I know sounds too good to be true but you have to try them. I love them in a my marinara sauce on some noodles or zoodles or a meatballs sandwich! Yummy if I do say so myself and I do!
Plant Based Meatballs
40 g or 1/4 cup of quinoa
2/3 cup of water to cook quinoa
40 g or 1/4 cup raw sunflower seeds, soaked
150 g cooked lentils, about 1 cup
2 tsp garlic powder
2 tsp Italian seasoning
Fresh basil, chopped
1 onion, finely minced
Preheat oven to 350 degrees.
In a small pot add the quinoa and water and bring to boil, lower temperature and cook for 12 minutes. Turn heat off and let stand for 5 minutes.
Allow quinoa to cool.
Grind sunflower seeds in a blender.
In a large bowl, combined all ingredients and knead mixture with your hands to create a dough like mixture. Make into equal size meatballs.
Bake for 20 minutes, turning half way through.
Add to your favorite sauce.
