While it does look good, please notice that he uses maize with cream of wheat. Otherwise, the texture is quite different. Also… please notice that you need to wait for the moisture to evaporate, otherwise you will never get that grill looking so nice

Gordon's presentation game is slacking he only left on the tomato tops. To step things up he should have boiled the cornmeal package into the mixture and then grilled it along with the resulting polenta for a true avant garde approach.
