Excellent info – so often we peel away the healthiest part of a fruit or veg. It makes sense that the peel and the layer just under the peel have the highest concentration of antioxidants, given these are the layers that are most exposed to possible damage. Apples and potatoes are some of the foods that are best eaten unpeeled.
It's much easier to simply spoon out the flesh !
I have been doing it even before I came across with this information..

Or, simply slice in half, then squeeeeeeeze out the avocado, finally scraping out any leftovers with a spoon. Easy peasy.
