For this Black Rum Fruit Cake you’ll Need…
2 boxed cake mix
1 cup rum
1 1/2 cup Port (or sherry – any fortified wine)
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon ground ginger
1 orange (zest)
1 cup raisins
1 cup prunes
1 cup citrus peel
1 cup mixed fruit
1-2 tablespoon Caribbean Browning
1 1/2 tablespoon Vanilla
* more Port or Rum for soaking the finished cake
* whatever ingredients is mentioned on the box of the cake

I've been soaking my dried fruits in rum for a month. Today, I'm making the cake, for a Hanukkah party.
Looks great Chris. My fruits are soaking now for about two weeks. Going to make a fruit cake not black cake. I do not like my fruit cakes where I can taste chunks of fruit so I blended my fruits very well. Plus I will be using flour instead of cake mix. However, this is a good recipe for when I am in a rush to get a cake done.
I'm making this for Hanukkah, I've set to soak all of my fruits in dark rum and port. I have a nice quart jar filled. I can't wait! They will be soaking for about a month.
