Mercy’s chef and a dietitian show you how to make fresh guacamole. The avocado, which is the basis of guacamole, is a very healthy fruit with more than 20 essential nutrients. This is a great source of fiber, potassium and vitamin E, as well as vitamin B and folic acid.
Fresh Guacamole

Serves 4
1 ripe avocado
2 tablespoons red onion or scallion
2 tablespoons diced fresh tomato
1 tablespoon chopped cilantro
1 fresh lime, juiced
Salt and pepper to taste
1. Peel and de-pit avocado place in mixing bowl, add remaining ingredients.
2. Mash and mix until a semi-chunky consistency is achieved. Keep tightly covered and serve within 2-3 hours. (Avocados brown quickly after being exposed to air.)
