Finally tried using fennel in a salad – works in so many ways! Works well cooked also – love this discovery!

The pasta course is NOT Vespri's or rather Palermo's famous Pasta Con Le Sarde, rather an extremely dumbed down version to be sure. The classic which is nothing short of a masterpiece is not nearly as simple as Mario is making it out to be. Crucial ingredients are missing including Sarde (Sardines), Finochietto (wild fennel fronds), Strato (sun dried tomato paste), along with Anchovy and Saffron which are optional.
