I don't know what that is but it is not sponge cake. It contains no butter, margarine, shortening or lard inside the cake. The egg whites once meringued need to be folded in as the last step to retain as much air as possible. If you use cream of tartar in the meringue then you don't need baking powder but put in a little baking soda to counteract the cream of tartar and the eggs. Also, use a pinch of Xanthan gum to help hold in the air

I think they meant 'baking powder'. They are fun to watch. Some steps were contradicting the normal baking rules, but hey the sponge came out brilliant in the end 🙂
