I mentioned my canning meat to a person at the grocery store, and she was so shocked that I could can meat! She said her mother would can fruits and vegetables, but never meat! Imagine!

I made this yesterday and tried one today (smelled so good too!). It was soooo good, much better than regularly cooked meatloaf! I want to make another batch! I too have college kids, and we raise our own pastured/grass-fed beef. Every year, we slaughter beef for another year's supply, so I tend to can the extra meat from prior year to make up room in the freezers. Canning the meat also ensure my sons will have quality "convenience" food from home! Thank you so much! While I have yet to see how long it will keep in storage, I can predict one batch will get consumed quicker than one year. I did have only 8 jars fit in my AA canner, so I turned the remaining mixture into meatballs.

That's the exact same recipe I use…..except, I add oregano. I'm surprised u don't as I've seen u add it to so many other savory dishes. Either way, meatloaf rocks – didn't know it could be canned. Great video. Ty for sharing.

The consistency of the meatloaf which is raw-packed is OK? Thick potato soup or pea soup or chili is a 'no'?

Amazon also carries a wonderful wide-mouth funnel…the "RSVP Endurance 18/8 Stainless Steel Funnel" for $15.95 and FS if you are a Prime member.
Given that you are a chef and exposed to all the cooking equipment available and that you made a makeshift funnel for a wide mouth jar, there is probably little chance of its existence. Do you or anyone out there know of a funnel that properly fits a wide mouth jar? I don't want a regular mouth funnel.

No, I meant after you've run the canner & want to get it off the burner so you slide (pick up) the canner over to a cool spot on the stove top. Do you preheat the spot you slide it to?
Do you heat the area of glass that you move the hot canner to so it doesn't crack the glass?

Another thought….could pink himalyan salt be substituted for the canning and pickling salt? It has no added iodine, but has natually occuring iodine. Does iodine ruin the preservation/canning?
I can't eat crackers (gluten) so could I substitute maybe some ground (gluten free)oats, some gound flax or gluten free breadcrumbs? About how many cups of gluten free bread crumbs for 10 lbs of gr beef if I went that route? Love your videos!!! Also assuming a good seal-how long will this meatlaof be good for if stored in a cool/dark/dry place?
If I use a 97/3, can I fill the jars a little fuller since there will be less grease in the meat?
