I have made and eaten many banana pancakes and these are with out the doubt the best.
Can add milk if prefer more of a English style pancake over American but just make sure really mash the banana down
Ingredients needed:
-1 cup or 80g of oats – can adapt to use any flour or mix different flours (almond, coconut, plain flour, wholewheat flour etc.) I sometimes have half almond and half oat.
-1/2 tsp baking powder (soda also works)
-3-4 small ripe bananas
-2eggs
-1tsp honey
-2tbsp of peanut butter (crunchy!!) / coconut oil / melted butter / vegetable oil. (I use peanut butter)
– 1/2tsp cinnamon
Optional:
-pinch of nutmeg and ginger
-chocolate chips
-blueberries
-vanilla essence
-cocoa to flour
Tastes great if add some walnuts lightly crushed up to!!
Nutrition if make 8 pancakes from the mixture, per pancake:
