you never want to put salt in your pasta like that. it ruins the fat in the eggs. when i came here to italy and tried making pasta with my mother in law and was about to put salt she told me never ever would italians put salt in their pasta. only in the water you boil it in 🙂
Good video. As a working chef, I will be checking-out your other recipes and am interested in the harvesteating concept.
You are right that the eggs are very important, but the flour also influences the dough. I usually use type '00' flour (available in most Italian shops) as it gives the right texture and is a little kinder to the arms than semolina. 😉
Your dough looks really soft (but it could just be the video). It should be elastic. You can check by pressing into the dough. If it comes back into shape your dough is done.
A trick for the amount of flour is: for every egg 100 grams of flour (sorry, I'm not really good with US measurements). This get he dough to the right consistency most of the time even without using oil.
